Colorful veggie delight...

Are you fed up with your routine test of curries or subjies...Me too, so I tried this recipe & it come out very gud...


Ingredients:

Chopped Green cabbage : 1 cup
Chopped Cauliflower : 1 cup
Chopped  Onions : 1 cup
Chopped Tomato : 1/2 cup
Chopped Carrots : 1/2 cup
Green peas : 1 cup
Chopped bell pepper : 1/2 cup
Chopped green chillies : 1 tbsp
Sweet corns : 1/2 cup
Vegetable oil : 1 tbsp
Mustard seeds : 1tsp
Cumin seeds : 1tsp
Chilly Powder : 1 tsp
Coriander Powder : 1tsp
Garam masala : 1 tsp
Cumin Powder : 1 tsp
Sugar : 1/4 tsp
Minced Garlic : 1 tsp
Minced ginger : 1 tsp

Procedure :

1. Heat the oil in a pan.
2. Let mustard seeds crack in oil then add cumin seeds.
3. Add ginger & garlic,wait until golden brown.
4. Add chopped onions & green chillies , sauté until golden brown then add carrots, bell pepper, green cabbage & cauliflower.
5. Add salt & sugar.
6. Sauté until all vegetables become soft.
7. Add green peas, sweet corn & tomato.
8. Cover the pan, if necessary sprinkle some water & let cook on low heat.
9. Check that all vegetables get cooked.
10. Add chilly Powder, coriander Powder, cumin powder & garam masala.
11. Garnish with cilantro.

You can also use this as a filling for spring rolls, Puffs, Samosa.



Whole Wheat Banana Bread


Best for breakfast....

Ingredients:

Whole wheat flour : 2 cups
Ripe bananas : 3
Melted unsalted butter/Ghee : 6 tbsp
Milk : 1 cup
Sugar : 1/2 cup (taste the banana & make sugar quantity less or more accordingly)
Baking powder : 1 tbsp
Baking soda : 1 tsp
Salt : 1/4 tsp
Vanilla extract : 1 tsp
Chopped Almonds : 1/2 cup


Procedure : 


1. Preheat the oven to 375 F.
2. Mix bananas,sugar,butter and milk, blend them in blender.


3. Add all remaining ingredients & blend again just to mix well. 
4. Pour in a greased baking tray .
5. Bake for 40 min or until golden brown.
6. Insert the toothpick in cake & make sure that it should come out dry.




Banana cake



Ingredients:

2 Tsp Baking Powder 
1 Tsp Baking Soda 
1 Tbsp Cardamom Powder 
1 Cup Maida/ all purpose flour 
1 Cup Milk 
2 Tbsp Almonds 
1 Cup Rawa/ Semolina
3 number Ripened Bananas 
A pinch of salt 
1 and 1/4 Cup Sugar 
1/2 Cup Unsalted Butter

Direction:


1. Pre-heat oven for 350 F
2. Mix bananas,sugar,butter and milk, blend them in blender.
3. Add all remaining ingredients except almonds & blend again just to mix well. 
4. Pour in a greased baking tray .
5. Garnish with almonds.
6. Bake for 45 min or until golden brown.

7. Insert the toothpick in cake & make sure that it should come out dry.


It turns out awesome....







Whole wheat cookies



Ingredients:

1.     1 cup whole wheat flour
2.     1/2 cup sugar
3.     1/4 teaspoon salt
4.     1/4 cup sliced almonds
5.     1/2 tsp cardamom powder (ilaichi)
6.     1/2 cup unsalted butter (8 tablespoons or 4oz)
7.     About 6 tablespoons of milk or as need
8.     1/2 cup milk powder

Procedure:
1.     Mix all ingredients & make a soft dough.
2.     Make a small bolls press them in both palms.
3.     Keep them on greased baking sheet.
4.     Keep a distance of about inch between the bolls.
5.     Bake them for 18 mins or until golden brown.
6.     Garnish them with chocolate chips

Chocolate chips cookies





Preparation Time: 15 min.
Cooking Time: 9 min.
Cooling Time: 15 min
Yields: 60

Ingredients:

2 ¼ Cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter(2 sticks) softened
¾ cup granulated sugar
¾ cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12 oz) semi sweet chocolate chips
1 cup chopped nuts(optional)

Directions:
·         PREHEAT oven to 375 F
·         COMBINE flour, baking soda & salt in small bowl.
·         Beat butter, granulated sugar, brown sugar, vanilla extract in large mixture bowl until creamy.
·         Add eggs, one at a time. Keep beating well after each addition.
·         Add combined dry ingredients,
·         Add choco chips & nuts . Mix well.
·         There are many methods to shape the cookies as below:
1.    Drop by rounded spoon onto ungreased baking sheet bake for 9 min & remove on wire racks to cool completely.
2.    Spread the mixture above in Grease the baking pan (15 x 10  inch) & bake for 20 to 25 min, remove on wire racks to cool completely & then cut into bars.
3.    Divide the above mixture in half, wrap in wax paper, refrigerate for 1 hour, shape each half in 15 inch log, again wrap into wax paper & refrigerate for 30 min cut onto ½ inch thick slices, place on ungreased baking sheet bake till golden brown, remove on wire racks to cool completely.  
You may store in refrigerator for up to 1 week or in freezer for 8 weeks. 



Carrot Roll...My innovation

You can make both crispy or soft rolls as you like.
You can serve soft rolls as sweet dish with main course. If you made them crispy then you can have for breakfast or evening snacks.  
For those who are calorie conscious : Use fat free sugar & minimize butter quantity.This dish will help them a lot cause carrots require more calories to digest than they have.
They are rich in dietary fiber, antioxidants & minerals.Carrots are also best to improve eye vision.So n'joy this sweet & healthy dish...


Ingredients...


For filling
Unsalted Butter/ghee : 2 tbsp
Grated carrot : 2 cup
Powdered sugar : 1 & 1/2 cup (taste the carrot & make sugar quantity less or more accordingly)
Coconut flakes/Grated coconut : 1/2 cup.
Cardamom Powder : 1 tsp


For wrapping
Bread slices : 6
Milk : 1 cup
Sugar: 1 tbsp  
For crispy rolls milk & sugar not required.


Procedure...


1. Heat the butter in pan.
2. Add coconut & coconut flakes & fry till mixture becomes soft.
3. Add sugar, cardamom powder & your mixture for filling is ready.




For wrapping:


1. Add 1 tbsp sugar in milk.Let the sugar completely dissolve.(Skip for crispy rolls)
2. Remove bread edges & into the above mixture.
3. Press slice into your both palm so that excess milk will remove.(Skip for crispy rolls)
4. Take 2 tbsp filling & keep on slice at middle, vertically.
5. Now roll the slice & keep on greased baking sheet .
(For crispy rolls : Apply milk or water at the vertical ends of slice so that rolls will not open.)
.


6. Keep sheet in oven preheated to 400F for 20 mins or until colored golden brown.
7. Cut 1 slice into two & have a fun...


For better results refrigerate for 2/3 hours.
For crispy rolls :- don't refrigerate serve hot.


You can store filling in refrigerator & make a quick carrot rolls.
